20 large jumbo pasta shells

1 lb ground turkey

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 ½ cups shredded mozzarella cheese, divided

¼ cup grated Parmesan cheese

1 large egg

3 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper, to taste

2 cups marinara sauce

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat the Oven: Set your oven to 375°F (190°C) so it’s hot and ready for baking.

    Cook the Pasta: Fill a large pot with salted water and bring it to a boil. Add the jumbo pasta shells and cook according to the package instructions until they are al dente. Once cooked, drain the shells and let them rest on a cooling rack or plate.

      Prepare the Filling: In a large skillet over medium heat, add the ground turkey. Cook, breaking it apart with a spatula, until it’s browned and fully cooked through, about 7-10 minutes. Be sure to drain any excess grease from the skillet afterward.

        Sauté Garlic and Spinach: To the skillet with the cooked turkey, add the minced garlic and sauté for approximately 30 seconds until it becomes fragrant. Next, incorporate the chopped spinach and cook for an additional 2-3 minutes, or until the spinach is wilted. Remove the skillet from heat.

          Mix the Filling: In a large mixing bowl, combine the turkey and spinach mixture with ricotta cheese, 1 cup of mozzarella cheese, grated Parmesan cheese, the egg, Italian seasoning, and season with salt and pepper. Stir everything together until well mixed and creamy.

            Fill the Shells: Generously spoon the turkey and spinach filling into each pasta shell, using about 1-2 tablespoons per shell to ensure they are stuffed nicely.

              Prepare to Bake: Spread half of the marinara sauce evenly over the bottom of a 9x13 inch baking dish. Arrange the stuffed shells seam-side up on top of the sauce. Pour the remaining marinara sauce over the shells and sprinkle the leftover mozzarella cheese on top.

                Bake: Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 25 minutes. After this time, remove the foil and continue baking for an additional 10-15 minutes, or until the cheese on top is bubbly and lightly golden.
