Savory Turkey and Spinach Stuffed Peppers

4 large bell peppers (any color you prefer)

1 lb ground turkey

2 cups fresh spinach, finely chopped

1 cup cooked brown rice

1 small onion, diced

3 cloves garlic, minced

1 teaspoon Italian seasoning

1 teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon black pepper

1 cup diced tomatoes (canned or fresh)

1 cup shredded mozzarella cheese (plus extra for topping)

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 375°F (190°C) to prepare for baking.

    Prepare the Peppers: Cut off the tops of the bell peppers, carefully remove the seeds and white ribs from the inside. Lightly brush the outsides of the peppers with olive oil and position them upright in a baking dish.

      Cook the Turkey Mixture: In a large skillet over medium heat, add 2 tablespoons of olive oil. Once heated, toss in the diced onion and sauté for about 3-4 minutes until they become translucent. Next, add the minced garlic and cook for an additional minute until fragrant.

        Add Ground Turkey: Increase the heat to medium-high and incorporate the ground turkey into the skillet. Cook the turkey, breaking it apart with a spoon, until it’s fully cooked and no longer pink, approximately 5-7 minutes.

          Mix in Vegetables: Stir in the finely chopped spinach, diced tomatoes, cooked brown rice, Italian seasoning, smoked paprika, salt, and black pepper. Allow this mixture to cook for another 2-3 minutes, until the spinach wilts down. Remove the skillet from the heat and fold in the shredded mozzarella cheese, reserving a small handful for later.
