½ teaspoon salt

1 teaspoon sugar

½ cup unsalted butter, cold and cut into small cubes

6-8 tablespoons ice water

1 pound Italian sausage (choose sweet or spicy based on your preference)

2 cups kale, tough stems removed and leaves chopped into bite-sized pieces

1 medium onion, finely diced

2 garlic cloves, minced

1 teaspoon red pepper flakes (optional for added heat)

1 teaspoon dried Italian herbs (such as oregano and basil)

½ cup ricotta cheese

1 cup shredded mozzarella cheese

Salt and black pepper, to taste

1 egg, beaten (for egg wash)

Instructions
 

Prepare the Pastry:

    - In a medium mixing bowl, whisk together flour, salt, and sugar until well combined.

      - Add the cold, cubed butter to the bowl. Using a pastry cutter or your fingertips, mix until the mixture resembles coarse sand with small pea-sized clumps.

        - Gradually add ice water, one tablespoon at a time, mixing gently with a fork. Stop adding water when the dough starts to come together but remains slightly crumbly. Avoid overworking it.

            Cook the Filling:
