8-10 lasagna noodles

1 lb ground beef or Italian sausage

2 cups ricotta cheese

1 tablespoon Italian seasoning

2 cloves garlic, minced

Salt and pepper to taste

Cook the Noodles: Start by bringing a large pot of salted water to a rolling boil. Carefully add the lasagna noodles and cook according to the package instructions until they are al dente. Once cooked, drain the noodles well and lay them flat on a clean surface or tray to cool slightly, preventing them from sticking.

    Prepare the Meat Filling: In a large skillet over medium heat, add the ground beef or Italian sausage. Using a spatula, break it apart as it cooks, browning it for about 5-7 minutes. Once browned, remove any excess fat from the skillet. Add the minced garlic and Italian seasoning, stirring for an additional minute until the garlic becomes fragrant. Remove the skillet from heat and allow the mixture to cool slightly.

      Mix Cheese Filling: In a medium mixing bowl, combine the ricotta cheese, 1 cup of shredded mozzarella cheese, all of the grated Parmesan cheese, and the large egg. Season this mixture with salt and pepper to your preference. Use a fork to mix everything thoroughly until the filling is smooth and well combined.

        Assemble the Rollups: Preheat your oven to 375°F (190°C). Spread a thin layer of marinara sauce on the bottom of a 9x13 inch baking dish to prevent sticking. Take one lasagna noodle and lay it flat on a clean surface. Spread a generous layer of the cheese filling along the length of the noodle, then place a spoonful of the meat mixture on top. Carefully roll the noodle up from one end to the other, ensuring the filling stays inside, and place the seam-side down in the prepared baking dish.
