Ingredients

1 lb (450g) beef sirloin, thinly sliced against the grain

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon hoisin sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil, divided

1 red bell pepper, julienned

1 yellow bell pepper, julienned

1 cup broccoli florets

1 carrot, thinly sliced

3 cloves garlic, minced

1 teaspoon fresh ginger, grated

3 green onions, chopped

Salt and pepper to taste

Cooked jasmine rice or noodles, for serving

Instructions

Marinate the Beef: In a medium mixing bowl, combine the thinly sliced beef with the soy sauce, oyster sauce, hoisin sauce, and cornstarch. Stir well to ensure every piece of beef is evenly coated in the marinade. Set aside to marinate for at least 15 minutes while you prepare the vegetables.

Prepare the Vegetables: Thoroughly wash and chop all the vegetables as specified in the ingredients. Having everything prepped in advance will make the cooking process smooth and efficient.

Heat the Skillet: Place a large skillet or wok over medium-high heat and add 1 tablespoon of vegetable oil. Allow the oil to heat until it shimmers, indicating it’s ready for the beef.

Cook the Beef: Once the skillet is hot, carefully add the marinated beef in a single layer. Let it sear undisturbed for about 2-3 minutes, allowing a golden brown crust to form. Stir-fry for an additional 2-3 minutes until the beef is cooked through. Remove the beef from the skillet and transfer it to a plate. Set aside.

Sauté the Aromatics: In the same skillet, add the remaining tablespoon of vegetable oil. As the oil heats, add the minced garlic and grated ginger. Sauté these aromatics for about 30 seconds, or until they become fragrant, ensuring not to burn them.

Add Vegetables: Toss in the julienned red and yellow bell peppers, thinly sliced carrot, and broccoli florets into the skillet. Stir-fry for about 5-7 minutes, or until the vegetables are cooked yet retain a nice crunch.

Combine Ingredients: Return the cooked beef to the skillet with the sautéed vegetables. Season generously with salt and pepper, and if desired, add a splash more soy sauce for extra flavor. Gently toss everything together, heating through for an additional 2-3 minutes for the flavors to meld.

Finish and Serve: Remove the skillet from the heat and generously sprinkle the chopped green onions over the stir-fry. Serve the vibrant dish immediately over bowls of fluffy jasmine rice or alongside steaming noodles for a wholesome meal.
