1 can (4-5 ounces) sardines in olive oil

2 slices rustic sourdough bread

1 tablespoon lemon juice

1 tablespoon capers, rinsed and finely chopped

Salt, to taste

Freshly ground black pepper, to taste

A handful of arugula or mixed greens, for garnish

For the Herb Whip:

1/2 cup heavy cream

1/4 cup fresh parsley, finely chopped

2 tablespoons fresh chives, finely chopped

1 tablespoon fresh dill, finely chopped

Zest of 1 lemon

Salt and pepper, to taste

Prepare the Herb Whip:

    - In a mixing bowl, pour in the heavy cream. Using a handheld mixer or a whisk, whip the cream until it forms soft peaks, which should take about 2-3 minutes.
