Ingredients

2 salmon fillets (approximately 6 oz each)

1 tablespoon extra virgin olive oil

1 tablespoon honey

Juice and zest of 1 fresh lemon

2 cloves garlic, finely minced

1 teaspoon Dijon mustard

Salt and black pepper, to taste

1 head of butter or romaine lettuce, with leaves carefully separated

1 ripe avocado, sliced

1 small cucumber, julienned

Fresh cilantro or flat-leaf parsley for garnish

Optional: Sriracha sauce for an extra kick

Instructions

Prepare the Lemon Glaze: In a medium mixing bowl, combine the olive oil, honey, freshly squeezed lemon juice, lemon zest, minced garlic, Dijon mustard, and a pinch of salt and pepper. Whisk until the mixture is smooth and well blended. This flavorful glaze will enhance the salmon beautifully.

Marinate the Salmon: Place the salmon fillets in a shallow dish and pour half of the lemon glaze over the fillets, ensuring they're evenly coated. Cover the dish with plastic wrap and let it marinate in the refrigerator for at least 15 minutes to allow the flavors to infuse.

Cook the Salmon: Preheat your grill or non-stick skillet over medium heat. Remove the salmon from the marinade and place it in the heated grill or skillet. Cook for about 4-5 minutes on each side, or until the salmon is thoroughly cooked and easily flakes apart with a fork. During the last minute of cooking, brush the remaining lemon glaze onto the fillets for an extra burst of flavor.

Flake the Salmon: Once cooked, transfer the salmon to a plate and allow it to rest for a couple of minutes. Use a fork to gently flake the salmon into bite-sized pieces, making it easier to assemble in the wraps.

Assemble the Wraps: Take a lettuce leaf and place a generous amount of flaked salmon in the center. Top it with a few slices of ripe avocado and julienned cucumber. Finish with a sprinkle of fresh cilantro or parsley for added flavor and color.

Serve and Enjoy: If you like a bit of heat, drizzle some Sriracha sauce over the filling before wrapping. Fold the lettuce leaf around the fillings, creating your delicious wrap, and enjoy immediately for the freshest taste!
