Ingredients

1 cup cooked quinoa

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 cup mixed bell peppers (red, yellow, green), diced

1 cup shredded carrots

1 cup chickpeas, rinsed and drained

1/2 cup red onion, thinly sliced

1/2 cup feta cheese, crumbled (optional)

1/4 cup fresh parsley, chopped

1/4 cup balsamic vinaigrette

Salt and pepper to taste

Instructions

Prepare the Quinoa: Begin by cooking the quinoa according to the package instructions, then spread it out on a plate to cool to room temperature. This will help prevent the other ingredients from wilting.

Choose Your Jars: Select mason jars or any glass containers with tight-fitting lids. These will not only keep your salad fresh but also showcase the vibrant colors of the ingredients.

Layer the Dressing: Pour a few tablespoons of balsamic vinaigrette into the bottom of each jar. This will help flavor the salad from the base up.

First Layer - Quinoa: Add a layer of cooled quinoa over the dressing in each jar. Make sure to evenly distribute the quinoa to create a solid base.

Second Layer - Vegetables: Start layering in the halved cherry tomatoes next, followed by the diced cucumber and then the colorful bell peppers. Press down gently on each layer to compact them slightly, which leaves room for the remaining ingredients.

Third Layer - Crunch Factor: Top with shredded carrots and then add the rinsed chickpeas. Follow these with the thinly sliced red onion for a burst of flavor in every bite.

Final Touches: If you’re including feta cheese, sprinkle the crumbled cheese on top of the red onion. Finish with a generous garnish of freshly chopped parsley for added freshness and color.

Seal and Chill: Secure the lids tightly on the jars. Store them in the refrigerator for at least 30 minutes (or longer, if preferred) to allow the flavors to meld beautifully.

Serve and Enjoy: When you're ready to enjoy your salad, give the jar a good shake to coat the ingredients with the balsamic vinaigrette or pour the contents into a bowl for a delightful presentation.
