4 ears of fresh corn, husked

2 ripe avocados, diced

1 medium red onion, finely chopped

2 medium tomatoes, diced

1 jalapeño, seeds removed and finely chopped (optional for extra heat)

1/4 cup fresh cilantro, finely chopped

Juice of 2 fresh limes

2 tablespoons extra-virgin olive oil

Salt and freshly ground black pepper, to taste

Roast the Corn: Preheat your grill or a grill pan to medium-high heat. Once hot, place the husked corn directly on the grill grates. Grill the corn, rotating it every 2-3 minutes, until all sides are beautifully charred and caramelized, which should take about 10-12 minutes. After grilling, remove the corn from the grill and allow it to cool slightly. When cool enough to handle, carefully slice the kernels off the cob and transfer them to a large mixing bowl.

    Prep the Ingredients: While the corn cools, prepare the remaining ingredients. Dice the avocados, chop the red onion, and dice the tomatoes. If you choose to use jalapeño, mince it as well. Add all these fresh ingredients to the bowl with the grilled corn.

      Mix the Salsa: To the mixture, add the chopped cilantro. In a separate small bowl, whisk together the juice of the limes, olive oil, salt, and pepper until blended. Drizzle this vibrant dressing over the corn and avocado mixture in the large bowl.
