Roasted Cauliflower Tacos

1 medium head of cauliflower, cut into bite-sized florets

2 tablespoons extra virgin olive oil

1 teaspoon smoked paprika

1 teaspoon ground cumin

1/2 teaspoon garlic powder

1/2 teaspoon chili powder

Salt and freshly ground black pepper, to taste

8 small corn or flour tortillas

1 cup red cabbage, finely shredded

1 ripe avocado, sliced

1/4 cup fresh cilantro leaves, chopped

1 lime, cut into wedges

Optional: Your choice of salsa, hot sauce, or additional taco toppings

Preheat the Oven: Begin by preheating your oven to 425°F (220°C) to ensure it's hot and ready for roasting.

    Prepare the Cauliflower: In a large mixing bowl, combine the cauliflower florets with the olive oil, smoked paprika, ground cumin, garlic powder, chili powder, salt, and pepper. Toss everything together until the cauliflower florets are evenly coated with the spice mixture.

      Roast the Cauliflower: Transfer the seasoned cauliflower to a baking sheet lined with parchment paper. Spread the florets out in a single layer for even roasting. Place the tray in the preheated oven and roast for 25-30 minutes, or until the cauliflower is golden brown and tender. Remember to toss the florets halfway through cooking to ensure they roast evenly.

        Warm the Tortillas: While the cauliflower is roasting, warm your tortillas. You can do this in one of two ways: either heat a dry skillet over medium heat and warm each tortilla for about 30 seconds on each side, or wrap them in aluminum foil and place them in the oven during the last 5 minutes of the cauliflower's roasting time.

          Assemble the Tacos: Once the cauliflower is perfectly roasted, remove it from the oven.
