Ingredients

1 cup quinoa

2 cups vegetable broth (or water)

1 cup cherry tomatoes, halved

1 bell pepper (any color), diced

1 medium cucumber, diced

1 cup corn kernels (fresh or frozen)

1 avocado, diced

1 cup black beans, rinsed and drained

½ cup red onion, finely chopped

1 tablespoon olive oil

Juice of 1 lime

1 teaspoon cumin

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Instructions

Rinse the Quinoa:

Begin by rinsing the quinoa thoroughly under cold running water using a fine-mesh sieve. This step helps eliminate any residual bitterness. After rinsing, drain the quinoa well.

      Cook the Quinoa:

In a medium saucepan, combine the washed quinoa with the vegetable broth or water. Bring the mixture to a boil over medium-high heat. Once it reaches a boil, reduce the heat to low, cover the pot, and allow it to simmer for approximately 15 minutes, or until all the liquid is absorbed. After cooking, take it off the heat and let it sit, covered, for an additional 5 minutes. Finally, use a fork to fluff the quinoa gently.

          Prepare the Veggies:

While the quinoa is cooking, take this time to prepare your vegetables. Dice the bell pepper and cucumber, halve the cherry tomatoes, and chop the avocado. If using frozen corn, microwave it according to the package instructions until fully heated through.

              Mix the Dressing:

In a small bowl, whisk together the olive oil, freshly squeezed lime juice, cumin, salt, and pepper until the mixture is well blended and emulsified.

                  Assemble the Bowls:

In a large mixing bowl, combine the cooked quinoa, black beans, chopped red onion, halved cherry tomatoes, diced bell pepper, corn, and cucumber. Drizzle the prepared dressing over the mixture and toss everything together gently until evenly coated.

                      Serve and Garnish:

Divide the colorful quinoa veggie mixture evenly into serving bowls. Top each bowl with a generous helping of diced avocado and sprinkle with fresh cilantro for an added touch of brightness and flavor.

                          Enjoy:

Serve the bowls immediately and delight in the delicious combination of vibrant colors and fresh flavors!
