Ingredients

1 lb ground beef

1 can (15 oz) black beans, drained and rinsed

1 cup enchilada sauce (store-bought or homemade)

1 cup corn kernels (fresh, frozen, or canned)

1 tsp ground cumin

1 tsp chili powder

1/2 tsp garlic powder

1/2 tsp onion powder

Salt and black pepper to taste

8 small corn or flour tortillas

1 cup shredded cheese (cheddar or Mexican blend)

1/4 cup fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions

Prepare the Beef: Heat a large skillet over medium heat and add the ground beef. Cook the beef for about 5-7 minutes, breaking it into smaller pieces with a spatula, until it is fully browned. Drain any excess fat from the skillet if necessary.

Incorporate Beans and Corn: To the skillet with the cooked beef, stir in the drained black beans, corn, ground cumin, chili powder, garlic powder, onion powder, and a pinch of salt and black pepper. Cook the mixture for an additional 3-4 minutes, stirring occasionally, until everything is heated through.

Mix in the Enchilada Sauce: Pour 1/2 cup of the enchilada sauce into the beef mixture, stirring well to ensure that all the ingredients are coated evenly. Remove the skillet from the heat to prepare for assembly.

Assemble the Enchiladas: In a separate skillet, lightly toast each tortilla over medium heat for about 30 seconds on each side, making them pliable. Place each tortilla on a flat surface, and spoon a generous amount of the beef and bean mixture down the center of each one. Roll the tortillas tightly and arrange them seam-side down in the original skillet.

Layer with Sauce and Cheese: Once all of the tortillas are packed into the skillet, pour the remaining enchilada sauce evenly over the top, then sprinkle the shredded cheese generously across the surface.

Melt the Cheese: Cover the skillet with a lid and reduce the heat to low. Let it cook for about 5-7 minutes or until the cheese is fully melted and bubbly.

Garnish and Present: After cooking, remove the skillet from the heat. Garnish your enchiladas with the chopped fresh cilantro and serve them warm alongside lime wedges for an extra burst of flavor.

Prep Time: 10 minutes | Total Time: 25 minutes | Servings: 4 servings

                  - Presentation Tips: Serve the enchiladas straight from the skillet for a rustic look, or transfer them to a serving platter. Add extra lime wedges and cilantro on top for a vibrant presentation.
