Quick Lemon Garlic Shrimp and Asparagus Pasta

8 oz spaghetti or your choice of pasta

1 lb large shrimp, peeled and deveined

1 bunch asparagus, trimmed and cut into 2-inch pieces

4 cloves garlic, minced

1/4 cup extra virgin olive oil

Zest and juice of 1 large lemon

1/2 teaspoon red pepper flakes (adjust according to your heat preference)

Salt and pepper, to taste

1/4 cup freshly grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente. Before draining, reserve 1 cup of the pasta cooking water. Then, drain the pasta and set aside.

    Sauté the Asparagus: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the asparagus pieces and sauté them for about 3-4 minutes until they are tender-crisp. Once cooked, remove the asparagus from the skillet and set it aside on a plate.

      Cook the Shrimp: In the same skillet, add the remaining olive oil. Sauté the minced garlic and red pepper flakes for about 30 seconds, or until fragrant. Then, add the shrimp to the skillet, seasoning them with salt and pepper. Cook for approximately 2-3 minutes on each side, until the shrimp are pink and opaque.

        Combine Everything: Return the cooked asparagus to the skillet with the shrimp. Stir in the lemon zest and juice, mixing well. If the mixture appears too dry, gradually add reserved pasta water, a little at a time, until you reach your desired sauce consistency.

          Mix with Pasta: Add the cooked spaghetti to the skillet, tossing gently to combine all the ingredients. Taste and adjust seasoning with additional salt and pepper if needed. For an extra creamy texture, fold in the grated Parmesan cheese until melted and well incorporated.
