Ingredients

1 lb large shrimp, peeled and deveined

1 cup fresh pineapple, diced

1 tablespoon olive oil

2 teaspoons chili powder

1 teaspoon garlic powder

1 teaspoon ground cumin

½ teaspoon sea salt

½ teaspoon freshly cracked black pepper

Juice of ½ lime

8 small corn tortillas

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Optional toppings: sliced avocado, diced red onion, shredded cabbage, or your favorite salsa

Instructions

Marinate the Shrimp: In a medium-sized bowl, combine the peeled and deveined shrimp with olive oil, chili powder, garlic powder, ground cumin, sea salt, black pepper, and the juice of half a lime. Toss the shrimp thoroughly to ensure all pieces are well-coated. Allow the shrimp to marinate for 15-20 minutes, letting the flavors infuse while you prepare the pineapple and other ingredients.

Grill the Pineapple: Preheat your grill or grill pan to medium-high heat. If using skewers, thread the diced pineapple onto them; alternatively, you can place the pineapple directly on the grill. Grill the pineapple for about 3-4 minutes, turning occasionally, until it becomes golden and slightly charred. Once done, remove the pineapple from the grill and set aside.

Grill the Shrimp: Using the same preheated grill, add the marinated shrimp, arranging them in a single layer. Grill the shrimp for 2-3 minutes on each side or until they turn pink and opaque, ensuring not to overcook them for optimal tenderness.

Warm the Tortillas: While the shrimp is grilling, place the corn tortillas on the grill for about 30 seconds on each side, or until they become warm and pliable, ready for filling.

Assemble the Tacos: On each warm tortilla, add a few grilled shrimp along with a chunk of the grilled pineapple. Pile on your preferred toppings, such as creamy avocado slices, vibrant diced red onion, or crunchy shredded cabbage for texture.

Garnish and Serve: Finish by sprinkling freshly chopped cilantro over the assembled tacos. Serve immediately with lime wedges on the side for an extra zest of flavor with every bite.
