1 cup beef broth

1 cup sour cream

1 teaspoon Dijon mustard

1 teaspoon smoked paprika

Salt and freshly ground black pepper, to taste

12 ounces egg noodles

Fresh parsley, chopped (for garnish)

Cook the Egg Noodles: In a large pot of boiling salted water, cook the egg noodles according to package instructions until they are al dente, usually about 7-9 minutes. Once cooked, drain them well and set aside.

    Sear the Beef: In a large skillet, heat the olive oil over medium-high heat. When the oil is shimmering, add the sliced beef sirloin in a single layer. Sear the beef for about 2-3 minutes, allowing it to brown without stirring too much. Once browned, transfer the beef to a plate and set aside.

      Sauté the Aromatics: In the same skillet, add the chopped onions. Sauté for approximately 3 minutes, or until they are soft and translucent. Add the minced garlic and sliced mushrooms, continuing to cook for an additional 5 minutes, or until the mushrooms have released their moisture and are golden brown.

        Combine Ingredients: Pour in the Worcestershire sauce and beef broth, using a wooden spoon to stir and deglaze the skillet, incorporating all the flavorful bits from the bottom. Bring this mixture to a gentle simmer.

          Add Beef Back In: Return the seared beef along with any juices back to the skillet. Stir in the sour cream, Dijon mustard, and smoked paprika until well combined. Reduce the heat to low and let the sauce gently simmer for 5-7 minutes, allowing the flavors to meld. Taste and adjust the seasoning with salt and freshly ground black pepper.
