1 pound beef sirloin, thinly sliced against the grain

2 tablespoons soy sauce

1 tablespoon cornstarch

1 tablespoon vegetable oil

1 red bell pepper, sliced into thin strips

1 cup broccoli florets

1 medium carrot, julienned

3 cloves garlic, minced

2 teaspoons fresh ginger, grated

3 green onions, chopped (whites and greens separated)

2 tablespoons oyster sauce

1 tablespoon sesame oil

Salt and pepper, to taste

Cooked rice or noodles, for serving

Sesame seeds, for garnish (optional)

Instructions
 

Marinate the Beef: In a medium mixing bowl, combine the thinly sliced beef with the soy sauce and cornstarch. Toss well to ensure each slice is evenly coated. Allow the beef to marinate for approximately 15 minutes while you prep the vegetables.

    Prepare Ingredients: Slice the red bell pepper into thin strips, julienne the carrot, and cut the broccoli into bite-sized florets. Mince the garlic and grate the ginger, setting them aside along with the chopped green onion whites (reserve the green parts for later).

      Heat the Skillet: Place a large skillet or wok over medium-high heat and add the vegetable oil. Heat the oil until it shimmers, indicating it's hot enough to sear the beef.

        Cook the Beef: Carefully add the marinated beef to the skillet in a single layer. Let it cook undisturbed for about 2-3 minutes to achieve a nice sear. Then, stir-fry the beef for an additional 2-3 minutes until browned and just cooked through. Remove the beef from the skillet and set aside on a plate.

          Stir-Fry the Vegetables: In the same skillet, add the minced garlic and grated ginger.               Serve: Remove the skillet from heat. Serve the beef and vegetable stir-fry hot over cooked rice or noodles, garnished with the reserved green onion tops and a sprinkle of sesame seeds if desired.
