To achieve the perfect BBQ Chicken Quesadillas, mastering the cooking techniques is essential. Start by preheating your skillet or griddle over medium heat. This temperature allows the quesadillas to cook evenly without burning the tortillas or undercooking the filling. A non-stick skillet or a well-seasoned cast-iron skillet works best to ensure a crispy exterior while preventing sticking.

Ingredients

2 cups cooked shredded chicken (rotisserie chicken works beautifully)

1 cup of your favorite BBQ sauce

1 cup shredded cheese (choose from cheddar, mozzarella, or a blend)

4 large flour tortillas

1/2 cup corn (drained if canned, thawed if frozen)

1/2 cup diced red onion

1/4 cup freshly chopped cilantro (optional for garnish)

Cooking spray or 1 tablespoon of olive oil for greasing the skillet

Instructions

Prepare the Chicken: In a medium mixing bowl, combine the cooked shredded chicken with the BBQ sauce. Mix thoroughly until every piece of chicken is evenly coated in the sauce. Set this flavorful mixture aside for assembly.

Assemble the Quesadillas: Heat a large skillet over medium heat. Lightly coat the skillet with cooking spray or add a tablespoon of olive oil. Place one flour tortilla on the skillet. On one half of the tortilla, spread 1/4 of the BBQ chicken mixture. Then, sprinkle over 1/4 cup of corn, a few tablespoons of diced red onion, and a generous portion of shredded cheese.

Fold and Cook: Carefully fold the tortilla in half to form a half-moon shape. Allow it to cook for about 3-4 minutes or until the bottom is golden brown and crispy. Gently flip the quesadilla using a spatula and cook for another 3-4 minutes on the opposite side until the cheese has melted and the tortilla is evenly browned.

Repeat the Process: Once the first quesadilla is cooked, remove it from the skillet and keep it warm by placing it on a plate covered with a kitchen towel. Repeat the assembly and cooking steps with the remaining tortillas and BBQ chicken filling until all are prepared.

Serve and Enjoy: Once all quesadillas are cooked, slice each one into wedges for easy serving. Present them hot, garnished with fresh cilantro. Consider serving with extra BBQ sauce for dipping and a side of sour cream for added creaminess!
