1 medium onion, diced

2 cloves garlic, minced

1 medium zucchini, grated

1 can (28 oz) crushed tomatoes

1 teaspoon Italian seasoning

Salt and pepper to taste

2 cups ricotta cheese

1 cup shredded mozzarella cheese (plus additional for topping)

1/2 cup grated Parmesan cheese

Preheat the Oven: Preheat your oven to 375°F (190°C). This will ensure it's ready for baking once your ziti is assembled.
