Ingredients

4 large bell peppers (any color)

1 pound ground turkey or beef

1 medium onion, diced

2 cloves garlic, minced

1 cup cooked rice (white, brown, or cauliflower rice)

1 can (15 oz) black beans, rinsed and drained

1 cup corn (frozen or canned)

1 packet taco seasoning (or homemade with chili powder, cumin, garlic powder, and paprika)

1 cup salsa (your choice of spicy or mild)

1 cup shredded cheese (cheddar, Mexican blend, or pepper jack for extra heat)

Fresh cilantro or parsley for garnish

Salt and pepper to taste

1 tablespoon olive oil for cooking

Instructions

Prepare the Bell Peppers: Start by preheating your oven to 375°F (190°C). Take the bell peppers and cut off the tops, ensuring to remove the seeds and membranes inside. Lightly brush the outer surface of the peppers with olive oil. Arrange them upright in a baking dish, cut side facing up.

Cook the Base Filling: Heat a tablespoon of olive oil in a large skillet over medium heat. Add the diced onion and sauté for about 3-4 minutes, until it becomes translucent. Then, add the minced garlic and continue to cook for another minute, stirring frequently until the garlic is aromatic.

Brown the Meat: Introduce the ground turkey or beef into the skillet. Season the mixture with salt, pepper, and taco seasoning to enhance the flavor. Cook the meat, breaking it up with a spatula, until it’s browned and fully cooked, which should take about 7-10 minutes.

Combine Filling Ingredients: Lower the heat and stir in the cooked rice, rinsed black beans, corn, and your salsa of choice. Mix everything thoroughly and let it simmer for approximately 5 minutes, allowing the flavors to meld together. Taste the filling and adjust the seasoning as needed.

Stuff the Peppers: Carefully spoon the flavorful filling into each bell pepper, packing it down gently to ensure they're filled. Once filled, generously sprinkle shredded cheese on top of each stuffed pepper.

Bake: Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 25 minutes. After this time, remove the foil and continue baking for an additional 10-15 minutes, or until the cheese is bubbly and the bell peppers are tender.

Garnish and Serve: Once ready, take the pan out of the oven and allow the stuffed peppers to cool for a few minutes. Garnish them with freshly chopped cilantro or parsley to give a pop of color and freshness. Serve warm and enjoy your delightful taco stuffed bell peppers!

                Prep Time: 15 minutes | Total Time: 50 minutes | Servings: 4-6

Presentation Tips: Serve each stuffed pepper on a plate, drizzling with extra salsa if desired, and a sprinkle of cheese or fresh herbs for an attractive presentation.
