1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 cup mixed vegetables (such as bell peppers, onions, spinach, and corn)

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon ground cumin

Salt and pepper to taste

Prepare the Vegetables: In a large skillet, heat the olive oil over medium heat. Once the oil is shimmering, add the mixed vegetables to the skillet. Sauté for approximately 5 minutes, stirring occasionally, until the vegetables begin to soften. Season the mixture with garlic powder, cumin, salt, and pepper. Stir well to combine and continue cooking for another minute to allow the spices to release their fragrance. Once done, remove the skillet from the heat.

    Assemble the Quesadillas: Place a tortilla flat on a clean surface or cutting board. On one half of the tortilla, evenly sprinkle ¼ cup of shredded cheddar cheese, followed by ¼ cup of shredded mozzarella. Layer a generous scoop of the sautéed vegetable mixture on top of the cheese. Carefully fold the other half of the tortilla over to form a half-moon shape.
