1 lb ground beef (preferably lean)

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (14 oz) diced tomatoes with green chilies

1 medium onion, finely diced

3 cloves garlic, minced

1 bell pepper (any color), diced

2 tablespoons chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and freshly ground black pepper to taste

1 tablespoon olive oil

Optional toppings: shredded cheese, sour cream, chopped cilantro, diced avocado

Instructions
 

Prep the Ingredients: Begin by finely dicing the onion and bell pepper, and mincing the garlic cloves. Rinse the black and kidney beans in cold water and drain well.

    Sauté the Aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Once the oil is hot, add the diced onion and bell pepper, sautéing for about 4-5 minutes until they are soft and translucent. Stir in the minced garlic and cook for an additional minute, allowing the garlic to become fragrant.

      Brown the Beef: Move the sautéed vegetables to one side of the pot and add the ground beef. Use a wooden spoon to break the meat apart and cook for about 6-8 minutes, or until it is browned and fully cooked. If there’s excess fat, carefully drain it from the pot.

        Add the Spices: Sprinkle in the chili powder, ground cumin, smoked paprika, along with salt and pepper. Stir thoroughly to coat the browned meat and sautéed vegetables with the spices for enhanced flavor.

          Combine the Ingredients: Pour in the diced tomatoes (with their juices), black beans, and kidney beans. Stir everything together until well combined.
