Ingredients

8 oz (225g) penne pasta

1 tablespoon olive oil

3 cloves garlic, minced

1 can (14 oz) diced tomatoes with juices

½ teaspoon red pepper flakes (adjust according to spice preference)

½ teaspoon sugar

1 cup heavy cream (or coconut cream for a vegan alternative)

1 cup fresh basil leaves, roughly chopped

Salt and pepper, to taste

½ cup grated Parmesan cheese (or nutritional yeast for a vegan option)

Extra fresh basil leaves for garnish

Instructions

Cook the Pasta: Bring a large pot of salted water to a boil. Add the penne pasta and cook according to the package instructions until al dente. Once cooked, drain the pasta, reserving ½ cup of the pasta water for later use. Set the drained pasta aside.

Sauté Aromatics: In a large skillet over medium heat, warm the olive oil. Add the minced garlic and sauté for approximately 1-2 minutes, or until fragrant. Be cautious not to let the garlic burn, as it can impart a bitter flavor.

Add Tomatoes & Spice: Incorporate the diced tomatoes along with their juices into the skillet. Sprinkle in the red pepper flakes and sugar. Allow this mixture to simmer for about 5 minutes, stirring occasionally, so the flavors meld and develop.

Create the Creamy Base: Lower the heat to a gentle simmer and pour in the heavy cream (or coconut cream). Stir well to integrate all ingredients. Allow the sauce to cook for an additional 3-4 minutes, or until it is warmed through and reaches a slightly thickened consistency.

Mix in Pasta: Add the reserved cooked penne pasta to the skillet, tossing gently to coat the pasta evenly with the creamy tomato sauce. If the sauce appears too thick, gradually add the reserved pasta water, stirring until you reach your desired creaminess.

Season & Add Basil: Taste the sauce and season with salt and pepper as needed. Stir in the chopped basil and grated Parmesan cheese (or nutritional yeast). Ensure everything is adequately combined for a perfect blend of flavors.

Serve: Serve the creamy tomato basil pasta hot, garnished with extra fresh basil leaves and a light sprinkle of additional Parmesan cheese (or nutritional yeast), if desired, for an elevated finish.
