1/2 cup granulated sugar

1 large egg

1 tsp pure vanilla extract

1 cup canned pure pumpkin puree

1/2 cup chopped pecans or walnuts (optional)

4 cups pumpkin ice cream (store-bought or homemade)

Whipped cream (optional, for serving)

Additional cinnamon sugar (optional, for sprinkling)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare two baking sheets by lining them with parchment paper to prevent sticking.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, ground cinnamon, nutmeg, ginger, and salt. Set this mixture aside as you prepare the wet ingredients.

      Cream Butter and Sugars: In a large mixing bowl (using either a hand mixer or stand mixer), cream together the softened butter, brown sugar, and granulated sugar. Beat until the mixture is light, fluffy, and well-combined.
