1 medium pumpkin (or 2 cups pumpkin puree)

1 baguette, sliced into 1/2 inch pieces

4 oz goat cheese, softened

2 tbsp olive oil, plus extra for brushing

2 tbsp honey, plus extra for drizzling

1 tsp fresh rosemary, finely chopped (or 1/2 tsp dried rosemary)

Salt and freshly ground black pepper, to taste

1/4 cup toasted pecans, chopped (optional)

Microgreens for garnish (optional)

Instructions
 

Prepare the Pumpkin:

    - If using a whole pumpkin, preheat your oven to 400°F (200°C). Carefully cut the pumpkin in half and scoop out the seeds and stringy insides. Cut the pumpkin into wedges and arrange them on a baking sheet. Drizzle with 2 tablespoons of olive oil, seasoning with salt and pepper to taste. Roast in the preheated oven for 25-30 minutes, or until the pumpkin is fork-tender and begins to caramelize.

      - If using canned pumpkin puree, simply set it aside for the next step.

        Make the Pumpkin Spread:

          - Once the roasted pumpkin is cool enough to handle, scoop the tender flesh into a mixing bowl and mash it well with a fork. If you are using canned pumpkin, add the puree directly to the bowl.

            - Stir in 2 tablespoons of honey, the chopped rosemary, and additional salt and pepper to taste. Mix until well combined, and set aside to allow the flavors to meld.

              Prepare the Baguette:
