Ingredients

For the Cake:

1 ½ cups all-purpose flour

1 cup granulated sugar

½ cup packed light brown sugar

½ teaspoon baking powder

½ teaspoon baking soda

½ teaspoon ground cinnamon

¼ teaspoon ground nutmeg

¼ teaspoon ground ginger

½ teaspoon salt

½ cup unsalted butter, melted (plus more for greasing)

1 cup canned pumpkin puree

2 large eggs

1 teaspoon vanilla extract

For the Topping:

½ cup packed brown sugar

¼ cup all-purpose flour

1 tablespoon ground cinnamon

¼ cup unsalted butter, softened

½ cup chopped walnuts or pecans (optional)

For the Glaze (optional):

½ cup powdered sugar

2 tablespoons milk

½ teaspoon vanilla extract

Instructions

Preheat the Oven:

Begin by preheating your oven to 350°F (175°C). Generously grease a 9x13-inch baking pan with butter and lightly dust it with flour to prevent sticking.

      Mix Dry Ingredients:

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, light brown sugar, baking powder, baking soda, ground cinnamon, ground nutmeg, ground ginger, and salt. Ensure all dry ingredients are well blended to create an even flavor throughout the cake.

          Prepare Wet Ingredients:

In a separate bowl, combine the melted butter (allow it to cool slightly), pumpkin puree, eggs, and vanilla extract. Use a whisk to mix these ingredients thoroughly until you achieve a smooth mixture.

              Combine Ingredients:

Gradually pour the wet mixture into the bowl containing the dry ingredients, stirring gently with a spoon or spatula until just combined. Take care not to overmix; it’s fine if the batter has a few lumps remaining.

                  Prepare the Topping:

In a small bowl, mix together the packed brown sugar, flour, and ground cinnamon. Add the softened butter, then use a fork or your fingertips to blend the mixture until it resembles coarse crumbs. If you are using nuts, fold them in now for added texture.

                      Layer and Bake:

Pour half of the cake batter into the prepared baking pan, spreading it evenly. Sprinkle half of the topping mixture over this layer. Next, add the remaining batter on top and finish with the rest of the topping mixture.

                          Bake:

Place the pan in the preheated oven and bake for 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Keep an eye on it towards the end to avoid over-baking.

                              Make the Glaze (Optional):

While the cake is baking, whisk together the powdered sugar, milk, and vanilla extract in a small bowl until smooth. This optional glaze will add a delightful touch of sweetness when drizzled on top.

                                  Cool and Serve:

Once baked, allow the cake to cool in the pan for about 10 minutes before gently transferring it to a wire rack to cool completely. Slice into squares and serve warm or at room temperature, drizzled with the optional glaze if desired.
