Ingredients

1 medium onion, diced

2 cloves garlic, minced

1 medium carrot, diced

1 bell pepper (red or yellow), diced

1 medium apple (Granny Smith or Honeycrisp), peeled and diced

2 cups pumpkin puree (canned or fresh)

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (14 oz) diced tomatoes, with juices

2 cups vegetable broth

2 teaspoons ground cumin

1 tablespoon chili powder

1 teaspoon smoked paprika

1/2 teaspoon ground cinnamon

Salt and pepper, to taste

Olive oil, for sautéing

1 cup corn kernels (fresh, frozen, or canned)

Optional toppings: sour cream, shredded cheese, fresh cilantro, or sliced jalapeños

Instructions

Sauté the Vegetables: In a large pot, heat a splash of olive oil over medium heat. Once the oil is shimmering, add the diced onion. Sauté for about 3-4 minutes until the onion becomes translucent. Then, add the minced garlic, diced carrot, and diced bell pepper. Continue to sauté for an additional 5 minutes, stirring occasionally, until all the vegetables are tender.

Incorporate the Apple and Spices: Mix in the diced apple along with the ground cumin, chili powder, smoked paprika, and ground cinnamon. Allow this mixture to cook for 2-3 minutes; this step helps release the aromas of the spices and allows the apple to caramelize slightly.

Add Pumpkin and Beans: Pour in the pumpkin puree along with the drained black beans, kidney beans, and diced tomatoes including their juices. Stir everything together to ensure an even distribution of ingredients.

Simmer the Chili: Gradually pour in the vegetable broth and stir well to combine all components. Season with salt and pepper according to your taste preferences. Bring the chili to a gentle boil, then lower the heat to simmer. Allow it to cook for 30-40 minutes, stirring occasionally, to let the flavors meld.

Mix in the Corn: During the last 10 minutes of cooking, stir in the corn kernels. Taste the chili once more and adjust the seasoning as necessary.

Serve the Chili: Once you notice that the chili has thickened and the flavors are deliciously integrated, take it off the heat. Serve the chili hot, garnished with your desired toppings such as sour cream, shredded cheese, fresh cilantro, or sliced jalapeños for a touch of heat.
