2 cups of cooked jasmine rice (preferably leftover, cold)

1 cup chicken breast, diced into bite-sized pieces

1 cup fresh pineapple, diced (reserve extra for garnishing)

1/2 cup frozen green peas

1/2 cup bell pepper, diced (red or yellow for a touch of sweetness)

2 green onions, finely sliced

3 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon oyster sauce (optional for a richer flavor)

1 tablespoon sesame oil

2 tablespoons vegetable oil

2 large eggs, lightly beaten

Salt and pepper to taste

Fresh cilantro leaves (for garnish)

Lime wedges (for serving)

Instructions
 

Prepare the Chicken:

    - In a large pan or wok, heat 1 tablespoon of vegetable oil over medium heat. Once hot, add the diced chicken breast. Season lightly with salt and pepper.
