Peach Yogurt Popsicles

4 ripe peaches, pitted and chopped into small pieces

1 cup plain Greek yogurt (or a non-dairy yogurt alternative of your choice)

1/2 cup honey or maple syrup (adjust according to your sweetness preference)

1 teaspoon vanilla extract

1 tablespoon fresh lemon juice

Optional: Fresh mint leaves for garnish

Prepare the Peaches: Start by washing the peaches thoroughly under cool water. Carefully pit the peaches and chop them into small pieces, discarding the pits. Ensure that the pieces are roughly equal in size for even blending.

    Blend the Mixture: In a blender, combine the chopped peaches, Greek yogurt, honey or maple syrup, vanilla extract, and lemon juice. Blend the mixture on high speed until it becomes smooth and creamy. Taste the blend; if it needs more sweetness, feel free to add a little more honey or maple syrup and blend again.

      Pour into Molds: Carefully pour the peach-yogurt mixture into popsicle molds. Leave a little space at the top of each mold (about a quarter-inch) to allow for expansion as the mixture freezes. For an extra burst of flavor and texture, you can add a few small chunks of fresh peaches into each mold before filling.

        Insert Sticks: Take your popsicle sticks and insert them into the center of each mold. If you find that the mixture is too thick and the sticks won’t stay upright, place the molds in the freezer for about 30 minutes to partially set before adding the sticks.

          Freeze: Secure the popsicle molds with their lids if they have them, and place them in the freezer. Allow them to freeze for a minimum of 4-6 hours, or until the popsicles are completely solid.

            Unmold & Serve: Once frozen, to easily release the popsicles, run warm water over the outside of the molds for just a few seconds. Gently pull the popsicles out of the molds, being careful not to break them. If desired, garnish with fresh mint leaves for a refreshing touch.

              Storage: Any leftover popsicles can be stored in an airtight container in the freezer for up to 2 weeks, ensuring you have a delightful treat ready to enjoy!
