1 large baguette or ciabatta loaf

1 cup fresh basil leaves

1 ripe peach, pitted and finely chopped

1/4 cup freshly grated Parmesan cheese

1/4 cup nuts (pine nuts or walnuts recommended)

1 garlic clove, minced

1/2 cup extra virgin olive oil

Salt and freshly ground black pepper to taste

1 cup fresh mozzarella, sliced

1/2 cup fresh arugula or baby spinach

Balsamic glaze for drizzling (optional)

Prepare the Peach Pesto: In a food processor, combine the fresh basil leaves, chopped peach, grated Parmesan cheese, nuts, and minced garlic. Season with a pinch of salt and pepper. Pulse the mixture until it becomes a smooth paste. While the processor is running, gradually drizzle in the olive oil until the pesto is creamy and well blended. Taste and adjust seasoning as desired.

    Slice the Bread: Carefully slice the baguette or ciabatta loaf in half horizontally, creating a pocket to hold the filling. If using a baguette, consider hollowing out a bit of the soft interior to make more room for the filling.
