3 medium zucchinis, sliced into 1/4-inch rounds

4 medium ripe tomatoes, sliced into rounds

1 cup freshly grated Parmesan cheese

1 cup shredded mozzarella cheese

1/2 cup panko breadcrumbs (for extra crunch)

3 tablespoons extra-virgin olive oil

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

Sea salt and freshly ground black pepper, to taste

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat your oven to 375°F (190°C). Prepare a 9x13-inch baking dish by lightly greasing it with cooking spray or a little olive oil.

    In a large mixing bowl, combine the sliced zucchinis and tomatoes. Add the minced garlic, dried oregano, dried basil, sea salt, and freshly ground black pepper. Drizzle with 2 tablespoons of olive oil, then gently toss everything together until the vegetables are well coated in the seasonings.

      In a separate bowl, mix together the grated Parmesan, shredded mozzarella, and panko breadcrumbs. Drizzle in the remaining tablespoon of olive oil and stir to combine. This will help create a crispy topping as it bakes.

        Spread half of the zucchini and tomato mixture evenly across the bottom of the greased baking dish.

          Evenly sprinkle half of the cheese and breadcrumb mixture over the first layer of vegetables.

            Layer the remaining zucchini and tomato mixture on top of the cheese layer, ensuring it's spread out evenly. Finish by sprinkling the remaining cheese and breadcrumb mixture over the top.

              Cover the baking dish with aluminum foil, placing it loosely to allow for some steam to escape. Bake in the preheated oven for 30 minutes.

                After 30 minutes, carefully remove the foil and continue to bake for an additional 15-20 minutes, or until the top is golden brown and the vegetables are tender.

                  Once finished, remove the dish from the oven and allow it to cool for a few minutes. Garnish with fresh basil leaves if desired before serving. This dish makes for a delightful side or a hearty vegetarian entrée.
