6 cups low-sodium beef or vegetable broth

1 cup dry white wine (such as Sauvignon Blanc; optional)

1 tablespoon soy sauce

Salt and freshly ground black pepper, to taste

1 cup grated Gruyère cheese

½ cup grated Parmesan cheese

Fresh parsley, chopped, for garnish
