One-Pot Creamy Tomato Basil Pasta

2 cups uncooked penne pasta

1 can (14 oz) diced tomatoes, with their juices

3 cups vegetable broth (or chicken broth for a richer flavor)

1/2 cup heavy cream

1 tablespoon olive oil

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon sugar (to balance the acidity of the tomatoes)

Salt and pepper, to taste

1/2 cup grated Parmesan cheese

1 cup fresh basil leaves, roughly chopped

Optional: crushed red pepper flakes for added heat

Sauté the Aromatics: In a large pot or sauté pan, heat the olive oil over medium heat. Once the oil shimmers, add the minced garlic. Sauté for about 1 minute or until the garlic is fragrant, being careful not to let it brown as it can become bitter.

    Combine Ingredients: Add the uncooked penne pasta, diced tomatoes (including the juices), and vegetable broth to the pot. Also, sprinkle in the dried oregano and sugar. Use a wooden spoon to stir everything together until evenly combined.

      Cook the Pasta: Increase the heat to bring the mixture to a gentle boil. Once boiling, reduce the heat to medium-low and let it simmer uncovered. Stir occasionally for about 10-12 minutes, or until the pasta reaches an al dente texture and most of the liquid has absorbed.

        Stir in Cream and Cheese: Lower the heat further and add the heavy cream and grated Parmesan cheese to the pot. Stir continuously until the cheese melts and the sauce becomes creamy. If the sauce appears too thick, feel free to add a splash of extra broth or water to achieve your desired consistency.

          Season and Add Basil: Taste the pasta and season with salt and pepper as needed. Gently fold in the fresh basil leaves, allowing them to wilt and release their fragrant aroma. If you prefer a spicy kick, sprinkle in some crushed red pepper flakes at this stage.
