4 boneless, skinless chicken thighs

2 cups sliced cremini mushrooms

1 medium onion, diced

3 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

1 tablespoon olive oil

2 teaspoons Dijon mustard

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Preheat Your Oven: Begin by preheating your oven to 400°F (200°C), ensuring it's ready for the bake.

    Sauté the Aromatics: In a large, oven-safe skillet, heat the olive oil over medium heat. Once hot, add the diced onion and sauté until it becomes translucent, which should take about 3-4 minutes. Next, incorporate the minced garlic and continue to sauté for another minute, allowing the garlic to release its fragrant aroma.

      Cook the Mushrooms: Add the sliced cremini mushrooms to the skillet, cooking them for about 5-6 minutes until they are softened and have taken on a golden brown color. Season the mixture with salt, pepper, and paprika to elevate the flavors.

        Prepare the Chicken: Shift the sautéed mushroom mixture to one side of the skillet. Season the chicken thighs generously with salt and pepper, then nestle them into the center of the skillet. Sear each thigh for approximately 3 minutes on each side, creating a beautiful golden crust.

          Make the Cream Sauce: In a medium bowl, whisk together the heavy cream, chicken broth, Dijon mustard, grated Parmesan cheese, dried thyme, and additional salt and pepper to taste until smooth.
