Ingredients

2 boneless, skinless chicken breasts

2 cups broccoli florets

1 cup cherry tomatoes, halved

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper, to taste

1 cup chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Chicken: Begin by seasoning both sides of the chicken breasts generously with salt, pepper, paprika, and dried thyme. This will enhance the flavor of the chicken.

Sear the Chicken: Heat the olive oil in a large skillet over medium-high heat. Once the oil is shimmering, carefully add the seasoned chicken breasts to the skillet. Cook them for about 5-6 minutes on each side, or until they are golden brown and no longer pink in the center. Once cooked, transfer the chicken to a plate and cover to keep warm.

Sauté the Vegetables: In the same skillet, add the minced garlic and sauté for about 30 seconds, or until fragrant—be cautious not to burn the garlic. Next, add the broccoli florets and halved cherry tomatoes. Stir and cook for approximately 4-5 minutes, or until the broccoli has turned bright green and is tender yet still crisp.

Make the Sauce: Reduce the heat to medium, then pour in the chicken broth. Allow the broth to come to a gentle simmer, letting it reduce slightly for about 3-4 minutes to concentrate the flavors.

Add Cream and Cheese: Stir in the heavy cream and grated Parmesan cheese, mixing thoroughly until the cheese has melted and the sauce turns creamy. If the sauce seems too thick for your liking, feel free to add a splash more of chicken broth to reach your desired consistency.

Combine Everything: Return the seared chicken breasts to the skillet, making sure to spoon the creamy sauce generously over the chicken. Let the dish simmer for an additional 2 minutes to ensure the chicken is heated through and infused with the flavors of the sauce.

Garnish and Serve: To finish, sprinkle fresh chopped parsley over the skillet for a bright, fresh touch. Serve this comforting dish immediately from the skillet for a rustic presentation. Enjoy your delightful creamy chicken and broccoli bliss!
