1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized cubes

1 tablespoon olive oil

1 medium onion, finely diced

2 cloves garlic, minced

1 cup (190g) long-grain white rice

2 cups (475ml) low-sodium chicken broth

1 (10oz) can cream of mushroom soup

2 cups (150g) fresh broccoli florets

1 teaspoon smoked paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1 cup (100g) shredded sharp cheddar cheese

1/2 cup (50g) grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Chicken: In a large skillet over medium heat, heat the olive oil until shimmering. Add the cubed chicken pieces, seasoning them with salt, black pepper, and smoked paprika. Cook for about 5-7 minutes, stirring occasionally, until the chicken is golden brown and fully cooked. Once done, transfer the chicken to a plate and set aside.

    Sauté the Aromatics: In the same skillet, add the diced onion and sauté for 3-4 minutes until it becomes soft and translucent. Incorporate the minced garlic, cooking for an additional minute until it releases its fragrant aroma.

      Incorporate the Rice and Liquids: Add the uncooked rice to the skillet, stirring well to coat it with the oil, onion, and garlic mixture. Pour in the chicken broth and the cream of mushroom soup, stirring until all ingredients are fully combined and the rice is evenly distributed.
