One-Pan Cheesy Chicken and Broccoli Bake

2 cups cooked chicken, shredded

3 cups fresh broccoli florets

1 cup uncooked quinoa

2 ½ cups chicken broth

1 cup sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

½ cup cream of mushroom soup (optional for a creamy texture)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper, to taste

¼ cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the oven to 375°F (190°C). Ensure your oven rack is in the middle position for even baking.

    Prepare the quinoa: In a medium saucepan, bring the chicken broth to a rolling boil. Stir in the uncooked quinoa, then reduce the heat to low. Cover the pot and let it simmer gently for about 15 minutes, or until the quinoa is fluffy and all the liquid has been absorbed. Remove from heat and let sit, covered, for an additional 5 minutes.

      Sauté the broccoli: Meanwhile, in a large oven-safe skillet over medium heat, add the broccoli florets and a splash of water. Steam for 3-4 minutes, until the broccoli is bright green and just tender. Carefully drain any excess water, and set the skillet aside.

        Mix the chicken and spices: In a mixing bowl, combine the shredded chicken with garlic powder, onion powder, paprika, salt, and pepper. Mix well until the chicken is evenly coated with the spices for maximum flavor.

          Combine ingredients: Add the cooked quinoa to the skillet with the sautéed broccoli. Then, incorporate the seasoned chicken mixture. If you want a creamier dish, stir in the cream of mushroom soup at this stage until well combined.

            Add the cheese: Sprinkle half of the shredded cheddar and mozzarella cheese evenly over the mixture in the skillet. Stir gently to ensure the cheese is well distributed throughout the dish.

              Top with remaining cheese: Spread the remaining cheddar and mozzarella generously over the top of the mixture. Finally, add a sprinkling of grated Parmesan cheese to enhance the flavor and provide a nice crust.

                Bake: Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the cheese is melted, bubbly, and golden brown.

                  Garnish and serve: Once baked, remove the skillet from the oven and let it cool for a few minutes. Garnish with freshly chopped parsley before serving for a bright touch.
