Ingredients

2 cups cooked chicken, shredded or diced

2 cups broccoli florets (fresh or frozen)

1 cup uncooked quinoa (or rice)

2 ½ cups chicken broth

1 cup shredded cheddar cheese

1 cup cream of mushroom soup (homemade or canned)

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon paprika

Salt and pepper, to taste

1 tablespoon olive oil

Optional: Chopped fresh parsley for garnish

Instructions

Preheat the Oven: Set your oven to preheat at 375°F (190°C).

Sauté Chicken and Broccoli: In a large, oven-safe skillet or pan, heat the olive oil over medium heat. Once hot, add the shredded chicken and broccoli florets. Sauté for about 3-4 minutes until the broccoli turns bright green and becomes slightly tender, stirring occasionally to ensure even cooking.

Add Dry Ingredients: Stir in the uncooked quinoa (or rice), garlic powder, onion powder, paprika, salt, and pepper. Mix these ingredients thoroughly to ensure they are evenly combined.

Combine Liquids: In a separate mixing bowl, whisk together the chicken broth and cream of mushroom soup until the mixture is smooth. Carefully pour this liquid over the chicken and broccoli mixture in the skillet, ensuring an even distribution.

Cheese It Up: Gently fold in half of the shredded cheddar cheese into the mixture, making sure it is distributed evenly throughout.

Bake: Sprinkle the remaining cheddar cheese on top of the skillet mixture. Cover the skillet with a lid or aluminum foil, then transfer it to the preheated oven. Bake for 25-30 minutes, or until the quinoa (or rice) is fully cooked and has absorbed all the liquid.

Final Touch: After baking, remove the skillet from the oven and allow it to rest for 5 minutes. This will help the dish settle and thicken a bit.

Serve: Spoon portions onto bowls or plates and enjoy your creamy, cheesy one-pan delight! For an added touch, sprinkle with fresh chopped parsley before serving for a burst of color and freshness.
