Ingredients

1 lb ground beef

1 medium onion, finely diced

2 cloves garlic, minced

1 cup long-grain white rice, uncooked

1 can (14.5 oz) diced tomatoes, undrained

2 cups beef broth

1 cup frozen mixed vegetables (peas, carrots, corn)

1 teaspoon smoked paprika

1 teaspoon garlic powder

1/2 teaspoon black pepper

1 teaspoon salt (adjust according to preference)

2 cups shredded cheddar cheese

Fresh parsley, chopped (for garnish)

Instructions

Sauté the Beef: In a large skillet or pan, heat over medium-high heat. Add the ground beef, breaking it apart with a spatula. Cook for about 5 minutes until the beef is nicely browned. Drain any excess fat from the pan.

Add Aromatic Ingredients: Incorporate the finely diced onion and minced garlic into the skillet. Cook for an additional 3-4 minutes, stirring occasionally, until the onion becomes translucent and aromatic.

Mix in Dry Seasonings: Add the uncooked white rice to the skillet, followed by the smoked paprika, garlic powder, black pepper, and salt. Stir everything together thoroughly, ensuring an even distribution of spices and rice.

Add Tomatoes and Broth: Pour in the undrained diced tomatoes along with the beef broth. Gently stir to combine, making sure the rice is well submerged in the liquid.

Include Vegetables: Stir in the frozen mixed vegetables. Increase the heat slightly until the mixture comes to a gentle boil. Once boiling, reduce the heat to low. Cover the pan with a lid and let it simmer for about 20-25 minutes, or until the rice is tender and has absorbed most of the liquid.

Add Cheesy Finish: After the rice is fully cooked, sprinkle the shredded cheddar cheese evenly over the top of the dish. Cover the pan once more and let it rest for 3-5 minutes, allowing the cheese to melt and bubble.

Garnish and Serve: Remove the pan from heat. Before serving, garnish with freshly chopped parsley for a pop of color. Serve warm directly from the pan for an enjoyable and satisfying meal experience.
