1 lb ground beef

1 medium onion, diced

2 cloves garlic, minced

1 cup long-grain white rice, rinsed

2 cups beef broth

1 can (14.5 oz) diced tomatoes (with juice)

1 cup bell peppers, chopped (any color)

1 cup corn kernels (fresh or frozen)

1 tsp chili powder

1 tsp cumin

Salt and pepper to taste

2 cups shredded cheddar cheese

Fresh parsley or cilantro for garnish (optional)

Instructions
 

Preheat & Prep: Begin by preheating your oven to 375°F (190°C). Make sure to gather all your ingredients. Have a large oven-safe skillet or casserole dish on hand for convenience.

    Cook the Beef: In your prepared skillet, add the ground beef over medium heat. Cook until the meat is evenly browned, breaking it apart with a spoon as it cooks. Once browned, drain any excess fat to ensure a less greasy dish.

      Sauté Aromatics: Add the diced onion and minced garlic to the skillet with the beef. Sauté for about 3-4 minutes, or until the onion becomes translucent and fragrant.

        Combine Ingredients: To the skillet, stir in the rinsed rice, beef broth, diced tomatoes (including their juice), chopped bell peppers, corn, chili powder, cumin, and salt and pepper. Mix all the ingredients thoroughly to ensure even distribution.

          Simmer: Increase the heat slightly, bringing the mixture to a gentle simmer. Allow it to simmer for about 5 minutes, stirring occasionally, so the flavors meld and the rice begins to soften.

            Bake: Once simmered, remove the skillet from heat and sprinkle half of the shredded cheddar cheese over the top. Follow with the remaining cheese as the final layer. Cover the skillet tightly with a lid or aluminum foil, and transfer it to the preheated oven.

              Cook: Bake in the oven for 25-30 minutes, or until the rice is tender and has absorbed most of the liquid, creating a creamy texture.
