Ingredients

1 cup grated zucchini (squeezed dry)

1 cup rolled oats

1/2 cup almond butter (or any nut/seed butter of your choice)

1/4 cup honey or maple syrup

1/4 cup chocolate chips (dark or dairy-free)

1/4 cup unsweetened shredded coconut

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

A pinch of salt

1/2 cup chopped nuts (optional: almonds, walnuts, or pecans)

Instructions

Prepare the Zucchini: Grate the zucchini using either a box grater or a food processor. Once grated, place the zucchini in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible. Removing excess liquid is crucial to prevent the energy bites from becoming soggy.

Combine the Ingredients: In a large mixing bowl, add the squeezed zucchini, rolled oats, almond butter, honey (or maple syrup), chocolate chips, shredded coconut, vanilla extract, ground cinnamon, and a pinch of salt. If you’re adding nuts, now is the time to include them too.

Mix Thoroughly: Using a spatula or your hands (which can be a fun way to engage with the mixture!), combine all the ingredients until they are well mixed. The mixture should be sticky and able to hold together when formed.

Chill the Mixture: After mixing, cover the bowl with plastic wrap and place it in the refrigerator for approximately 30 minutes. Chilling will make the mixture easier to handle when forming the bites.

Shape the Energy Bites: Once chilled, scoop out a spoonful of the mixture and roll it between your palms to create small balls, roughly 1 inch in diameter. Transfer each ball to a parchment-lined baking sheet or plate as you go.

Final Chill: After all the bites are shaped, put them back in the refrigerator for an additional 30 minutes to help them firm up further.

Storage Instructions: Store the Zucchini Bliss Bites in an airtight container in the refrigerator for up to one week or freeze them for longer-term storage. For a refreshing energy boost, enjoy them chilled!

Prep Time: 15 minutes | Total Time: 1 hour 15 minutes | Servings: About 12-15 bites

Presentation Tips: For an attractive presentation, consider arranging the bites on a decorative plate and garnishing with a sprinkle of shredded coconut or a few fresh mint leaves for a pop of color.
