Ingredients

1 cup rolled oats

1/2 cup nut butter (choose from peanut butter, almond butter, or sunflower seed butter)

1/4 cup honey or maple syrup

1/2 cup mixed nuts (such as almonds, walnuts, and pecans, roughly chopped)

1/4 cup seeds (pumpkin seeds and sunflower seeds work well)

1/2 cup dried fruits (options include cranberries, raisins, or chopped apricots)

1/4 cup dark chocolate chips (optional, for a sweet touch)

1/2 teaspoon vanilla extract

A pinch of sea salt

Instructions

Prepare the Dish: Start by lining an 8x8 inch (20x20 cm) baking pan with parchment paper, allowing for some overhang at the edges. This will facilitate easy lifting of the bars once they are set.

Combine Dry Ingredients: In a spacious mixing bowl, combine the rolled oats, chopped mixed nuts, seeds, dried fruits, and dark chocolate chips (if using). Add a pinch of sea salt. Stir the mixture thoroughly until everything is evenly distributed.

Mix Wet Ingredients: In a small saucepan, over low heat, combine the nut butter, honey or maple syrup, and vanilla extract. Stir continuously until the nut butter is melted and the mixture becomes smooth and homogenous.

Combine Mixtures: Pour the warm nut butter mixture over the dry ingredients in the bowl. Use a spatula or wooden spoon to mix everything together, ensuring that all the oats and nuts are well-coated. If the mixture seems crumbly, add a touch more nut butter or honey until the mixture holds together cohesively.

Transfer to Pan: Immediately transfer the combined mixture into the prepared baking pan. With the back of your spatula or damp hands (to avoid sticking), press the mixture firmly and evenly into the pan, making sure it’s compact.

Chill and Set: Cover the pan with plastic wrap or foil and place it in the refrigerator for a minimum of 2 hours, or until the bars are firm and fully set.

Slice and Enjoy: Once set, lift the bars out of the pan using the overhanging parchment paper. Transfer to a cutting board and slice into squares or rectangles based on your preferred size.

Storage: Store the trail mix bars in an airtight container in the refrigerator for up to one week, or freeze them for extended storage. Enjoy these bars as a quick and nourishing snack or a healthy dessert!
