Ingredients

1 cup graham cracker crumbs

1/4 cup unsalted butter, melted

2 cups cream cheese, softened to room temperature

1 cup powdered sugar

1/4 cup freshly squeezed lemon juice

Zest of 1 lemon (about 1 tablespoon)

1 teaspoon pure vanilla extract

1 cup heavy whipping cream

1 1/2 cups mixed berries (strawberries, blueberries, raspberries)

Fresh mint leaves for garnish (optional)

Instructions

Prepare the crust: In a medium-sized mixing bowl, combine the graham cracker crumbs and melted butter. Use a fork or your fingers to mix until the mixture resembles wet sand. Evenly press this mixture into the bottom of serving cups or small dessert glasses, creating a firm layer. Place the crusts in the refrigerator to set while you prepare the lemon cream filling.

Make the lemon cream filling: In a large mixing bowl, use an electric mixer to beat the softened cream cheese until it's completely smooth and creamy. Gradually add in the powdered sugar, freshly squeezed lemon juice, lemon zest, and vanilla extract. Continue mixing until all the ingredients are well combined and the mixture is creamy without any lumps.

Whip the cream: In a separate clean bowl, pour in the heavy whipping cream and whip using an electric mixer until soft peaks begin to form. This should take about 2-3 minutes. Carefully fold the whipped cream into the lemon cream mixture using a spatula, being gentle to maintain its light and airy consistency. Mix until no streaks remain.

Assemble the cups: Take the chilled graham cracker crusts out of the refrigerator. Spoon the luscious lemon cream filling over the crust in each cup, leaving about half an inch of space at the top for the berry layer.

Add the berries: Generously top each cup with a mix of berries. For a decorative touch, you can keep some berries whole while slicing others. This adds visual appeal and makes for a more enticing presentation.

Chill: Place the assembled cups back in the refrigerator and let them chill for at least 1 hour. This allows the filling to firm up and the flavors to develop.

Serve: Just before serving, garnish each cup with a fresh mint leaf for an added pop of color and flavor. Enjoy your delightful and refreshing no-bake lemon berry cups!
