Ingredients

1 cup rolled oats

½ cup almond butter (feel free to substitute with any nut butter you prefer)

¼ cup honey (or use maple syrup for a vegan-friendly option)

½ cup unsweetened shredded coconut

¼ cup chopped almonds or walnuts

½ cup assorted dried fruits (choose from apricots, cranberries, or raisins)

1 tsp pure vanilla extract

½ tsp ground cinnamon

A pinch of sea salt

Instructions

In a large mixing bowl, combine the rolled oats, almond butter, honey (or maple syrup), shredded coconut, chopped nuts, dried fruits, vanilla extract, ground cinnamon, and a pinch of sea salt.

Using a spatula or your hands, mix the ingredients thoroughly until everything is well combined and the mixture feels cohesive, holding together when pressed.

Transfer the bowl to the refrigerator and let the mixture chill for about 15-20 minutes. This step will help it firm up, making it easier to shape into bites.

After chilling, take small portions of the mixture, approximately 1 inch in diameter, and roll them into bite-sized balls. If the mixture is sticky, you can lightly dampen your hands with water to facilitate shaping.

Arrange the energy bites on a parchment-lined baking sheet or a clean plate.

Optional: For an extra layer of flavor and texture, roll some of the bites in additional shredded coconut or chopped nuts before placing them on the sheet.

Store the energy bites in an airtight container in the refrigerator, where they will keep for up to one week. For longer storage, consider freezing them to enjoy later.
