4 boneless, skinless chicken breasts

2 tablespoons olive oil

1 medium onion, thinly sliced

4 cloves garlic, minced

1 bell pepper (choose red, yellow, or green), sliced into strips

1 can (14 oz) diced tomatoes, drained

1 cup cherry tomatoes, halved

1 teaspoon dried oregano

1 teaspoon fresh basil, chopped (or substitute with ¼ teaspoon dried basil)

1 teaspoon red pepper flakes (optional, to add some heat)

Salt and freshly ground black pepper, to taste

¼ cup grated Parmesan cheese
