Ingredients

For the Carrot Cake:

2 cups all-purpose flour

2 teaspoons baking powder

1 teaspoon baking soda

½ teaspoon salt

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

1 cup vegetable oil

1 cup granulated sugar

1 cup packed dark brown sugar

4 large eggs

2 cups grated carrots (about 4-5 medium-sized carrots)

1 cup crushed pineapple, well-drained

½ cup chopped walnuts or pecans (optional)

1 teaspoon vanilla extract

For the Cream Cheese Frosting:

8 ounces cream cheese, softened to room temperature

½ cup unsalted butter, softened to room temperature

4 cups powdered sugar

1 teaspoon vanilla extract

1-2 tablespoons milk (as needed for consistency)

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Prepare two 9-inch round cake pans by greasing them with butter or non-stick spray and dusting them with flour to prevent the cake from sticking.

Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, ground cinnamon, and ground nutmeg until evenly combined. Set this bowl aside for later use.

Combine Wet Ingredients: In a large mixing bowl, combine the vegetable oil, granulated sugar, and dark brown sugar. Whisk these together until smooth and well blended. Add the eggs, one at a time, ensuring to beat well after each addition to incorporate air. Finally, stir in the vanilla extract for flavor.

Incorporate Carrots and Pineapple: Gently fold in the grated carrots and drained crushed pineapple into the wet mixture. If you’re including chopped nuts, this is the perfect moment to fold them in as well.

Mix Together: Gradually introduce the dry ingredients into the wet mixture, stirring gently until just combined. Take care not to overmix; it’s perfectly alright for some lumps to remain to keep the cake tender.

Pour and Bake: Evenly divide the batter between the two prepared cake pans. Place the pans in the preheated oven and bake for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean. Allow the cakes to cool in the pans for about 10 minutes before transferring them to a wire rack to cool completely.

Prepare the Frosting: While your cakes cool, prepare the cream cheese frosting. In a large mixing bowl, beat the softened cream cheese and softened butter together until you achieve a fluffy and smooth consistency. Gradually mix in the powdered sugar until well incorporated. Stir in the vanilla extract for an extra flavor boost. If the frosting seems too thick, add milk one tablespoon at a time until you reach your desired spreadable consistency.

Assemble Your Cake: Once the cakes are fully cooled, place one layer on a serving plate. Generously spread cream cheese frosting over the top of this layer. Place the second layer on top and cover both the top and sides of the cake with a lovely layer of frosting.

Decorate (Optional): For an extra touch, consider garnishing the top with additional chopped nuts, a sprinkle of shredded coconut, or a dusting of cinnamon, all of which complement the cake beautifully.

Serve and Enjoy: Slice the cake into 12 delightful pieces and serve to your family and friends! Indulge in the rich flavors and moist texture of this carrot delight and watch as everyone savors every bite.
