Ingredients

1 medium zucchini, grated

1 cup sharp cheddar cheese, shredded (divided)

3 large eggs

1/2 cup milk

1/4 cup all-purpose flour

1/4 teaspoon baking powder

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper, to taste

1 tablespoon olive oil (for greasing)

Fresh chives, chopped (for garnish)

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). Grease a mini muffin tin with non-stick cooking spray or brush each cup with olive oil to prevent sticking.

Prepare the Zucchini: In a medium bowl, grate the zucchini and sprinkle it lightly with salt. Allow it to rest for 10 minutes; this process helps to draw out excess moisture. After 10 minutes, place the grated zucchini in a clean kitchen towel and squeeze to remove as much liquid as possible.

Make the Quiche Batter: In a separate medium mixing bowl, crack the eggs and whisk them together. Add the milk, flour, baking powder, garlic powder, onion powder, and a pinch of salt and pepper. Whisk everything together until the mixture is smooth and well combined.

Combine Ingredients: Fold the drained zucchini into the quiche batter, followed by half of the shredded cheddar cheese. Mix gently until everything is evenly incorporated.

Fill the Muffin Tin: Carefully pour the quiche mixture into the prepared mini muffin tin, filling each cup about 3/4 of the way full. Sprinkle the remaining cheddar cheese on top of each filled cup for added deliciousness.

Bake the Quiche Bites: Place the filled muffin tin in the preheated oven and bake for 18-20 minutes. The quiche bites should puff up and be set in the center when done.

Cool and Serve: Once baked, remove the muffin tin from the oven and allow the quiche bites to cool in the tin for about 5 minutes. After cooling, gently remove each quiche bite and transfer them to a serving platter.

Garnish and Enjoy: Just before serving, sprinkle the mini quiche bites with freshly chopped chives for a pop of color and flavor. Serve warm or at room temperature for a delightful appetizer or snack!
