Ingredients

For the Chicken:

1 lb (450g) boneless, skinless chicken thighs

1 cup buttermilk

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika (for an extra flavor kick)

Salt and freshly ground black pepper, to taste

1 cup all-purpose flour

1 tablespoon cornstarch

Oil for frying (canola or vegetable)

For the Waffles:

1 cup all-purpose flour

1 tablespoon baking powder

1 teaspoon granulated sugar

¼ teaspoon salt

1 cup milk

1 large egg

2 tablespoons melted unsalted butter

Cooking spray or a brush of additional oil

For Assembly:

Maple syrup, for drizzling

Sliced pickles (optional, but recommended for added crunch)

Sriracha or your favorite hot sauce (optional, for a spicy twist)

Instructions

Marinate the Chicken: In a mixing bowl, whisk together the buttermilk, garlic powder, onion powder, smoked paprika, salt, and pepper. Add the chicken thighs, ensuring that each piece is fully submerged and coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or overnight for enhanced flavor.

Prepare the Waffle Batter: In a large mixing bowl, combine the all-purpose flour, baking powder, sugar, and salt. In another bowl, whisk together the milk, egg, and melted butter until smooth. Gradually pour the wet ingredients into the dry ingredients and mix until just combined; be careful not to overmix to keep the waffles fluffy.

Cook the Waffles: Preheat your waffle iron according to the manufacturer's instructions. Once heated, lightly spray the cooking surface with cooking spray or brush with a small amount of oil. Pour sufficient batter to cover the waffle iron's surface and close the lid. Cook until the waffles are golden brown and crisp. Depending on your waffle iron, this recipe should yield approximately 4-6 mini waffles.

Prepare the Chicken: In a shallow dish, mix the flour and cornstarch together. Remove the marinated chicken from the buttermilk, allowing any excess to drip off. Dredge each piece in the flour mixture, pressing lightly to ensure an even coating.

Fry the Chicken: Heat oil in a heavy-bottom skillet to 350°F (175°C). Carefully add the chicken pieces, frying them for about 4-5 minutes on each side, or until they are golden brown and cooked through (internal temperature should reach 165°F/75°C). Once cooked, transfer the chicken to a plate lined with paper towels to absorb excess oil.

Assemble the Sliders: Start with a mini waffle as the base, place a piece of crispy fried chicken on top, and add a slice of pickle if desired for added flavor. Drizzle with maple syrup to enhance the sweetness. Finish by topping with another mini waffle to create a delightful sandwich.

Serve: Serve the sliders warm on a platter. Provide additional maple syrup and hot sauce on the side for guests to drizzle or dip as desired.

Prep Time: 30 minutes | Total Time: 2 hours (includes marinating) | Servings: 4-6

                  - Presentation Tips: Arrange the sliders on a wooden board or a colorful platter. You can garnish with fresh herbs like parsley for an elegant touch and add small bowls of syrup and hot sauce for easy serving.
