Ingredients

2 large cucumbers

1 can (5 oz) tuna in water, drained

2 tablespoons mayonnaise (or substitute with Greek yogurt for a lighter option)

1 tablespoon Dijon mustard

1 tablespoon fresh lemon juice

1 celery stalk, finely chopped

2 tablespoons red onion, finely chopped

Salt and pepper to taste

Optional toppings: sliced cherry tomatoes, fresh dill sprigs, capers, or shredded cheese

Toothpicks or small skewers (for serving)

Instructions

Prepare the Cucumber Boats: Begin by thoroughly washing the cucumbers under cold water. Carefully slice each cucumber in half lengthwise. Using a small spoon or a melon baller, scoop out the seeds and some of the flesh to create hollowed-out, boat-like shapes. Set these cucumber boats aside.

Make the Tuna Filling: In a medium mixing bowl, combine the drained tuna, mayonnaise (or Greek yogurt), Dijon mustard, fresh lemon juice, finely chopped celery, and red onion. Stir the mixture together until all ingredients are well incorporated. Season with salt and pepper to taste for added flavor.

Assemble the Sliders: Take your prepared cucumber boats and generously spoon the tuna filling into each half, ensuring they are well-filled for maximum deliciousness.

Add Toppings: For added flavor and visual appeal, top each filled cucumber boat with your choice of optional ingredients. Consider adding sliced cherry tomatoes, a sprinkle of fresh dill, a few capers, or a sprinkle of shredded cheese.

Secure and Serve: If using toppings, insert toothpicks or small skewers through the assembled sliders to hold everything in place. Serve immediately for the freshest taste, or refrigerate for up to 30 minutes for a cool, refreshing appetizer.
