Mini Taco Pie Puff Pastries

1 package (17.3 oz) frozen puff pastry sheets (contains 2 sheets), thawed

1 lb ground beef (or ground turkey for a lighter option)

1 packet taco seasoning (about 1 oz)

1 cup refried beans (canned or homemade)

1 cup shredded cheese (use either cheddar or a Mexican cheese blend)

1/2 cup diced tomatoes (fresh or canned, with excess juices drained)

1/4 cup sliced black olives (optional)

1/4 cup diced red onion

1 egg (for egg wash)

Fresh cilantro leaves (for garnish)

Sour cream and salsa (for serving)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 400°F (200°C).

    Cook the Meat: In a large skillet over medium heat, add the ground beef or turkey. Cook until the meat is browned and fully cooked through, breaking it into small pieces as it cooks. Once done, drain any excess fat. Stir in the taco seasoning and continue to cook for an additional 2–3 minutes until the seasoning is fragrant. Allow the mixture to cool slightly.

      Prepare the Puff Pastry: On a floured surface, roll out each thawed puff pastry sheet to create a rectangle approximately 1/8 inch thick. Cut each sheet into 4 equal squares, giving you a total of 8 squares.

        Assemble the Pies:

          - Place one square of puff pastry on a baking sheet lined with parchment paper.

            - Spread a thin layer of refried beans in the center of the pastry square.

              - Spoon some of the seasoned meat mixture over the beans.

                - Add a tablespoon of diced tomatoes, followed by a few black olives (if using), and a teaspoon of diced red onion.

                  - Sprinkle a generous amount of shredded cheese on top.

                    - Place another square of puff pastry over the filled square, and press the edges with a fork to seal them tightly.

                      Apply Egg Wash: In a small bowl, beat the egg well. Use a brush to apply the egg wash evenly over the top of each pastry to give it a beautiful golden color when baked.

                        Bake: Place the baking sheet in the preheated oven and bake for 15–20 minutes, or until the pastries are puffy and golden brown.

                          Garnish: Once they’re done baking, remove the pastries from the oven and let them cool for a few minutes. Garnish each pastry with fresh cilantro leaves for a pop of color and flavor.
