Ingredients

1 lb (450g) breakfast sausage, casings removed

2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon salt

½ teaspoon black pepper

½ cup (115g) unsalted butter, cold and diced

1 cup (100g) shredded sharp cheddar cheese

¾ cup (180ml) whole milk

1 tablespoon Dijon mustard (optional)

1 egg, beaten (for egg wash)

Fresh chives, chopped, for garnish (optional)

Instructions

Preheat Oven: Begin by preheating your oven to 400°F (200°C). Prepare a baking sheet by lining it with parchment paper to prevent sticking.

Cook Sausage: Heat a skillet over medium heat and crumble the breakfast sausage into the pan. Cook it for about 5-7 minutes, stirring occasionally, until it is browned and fully cooked. Once done, drain any excess fat and let it cool slightly.

Make Biscuit Dough: In a large mixing bowl, combine the all-purpose flour, baking powder, salt, and black pepper. Add the cold, diced butter to the dry ingredients and use a pastry blender or your fingertips to cut the butter into the flour mixture until it achieves a texture similar to coarse crumbs.

Add Cheese: Fold in the shredded sharp cheddar cheese, ensuring it is evenly distributed throughout the mixture.

Combine Wet Ingredients: In a smaller bowl, whisk together the whole milk and Dijon mustard (if using). Gradually pour this wet mixture into the dry ingredients and gently stir using a fork until just combined. Be careful not to overmix; the dough should be slightly lumpy.

Incorporate Sausage: Carefully fold in the cooked sausage, mixing gently until the pieces are evenly dispersed throughout the dough.

Shape Biscuits: Lightly flour your work surface and turn out the biscuit dough. Pat it into a rectangle about 1 inch thick. Using a biscuit cutter or a sharp knife, cut out rounds that are approximately 2 inches in diameter.

Prepare for Baking: Arrange the biscuit rounds on the prepared baking sheet. To achieve a beautiful golden color, brush the tops of the biscuits with the beaten egg.

Bake: Place the baking sheet in the preheated oven and bake for 15-18 minutes, or until the biscuits have risen and turned a lovely golden brown.

Cool and Serve: Once baked, allow the biscuits to cool for a few minutes on the baking sheet. Then, carefully transfer them to a wire rack to cool further. Serve warm, optionally garnished with freshly chopped chives for an added burst of color and flavor.
